So what gathering skills should i have with Apothecary? Can i have them all? Or?

Only 1 gather skill.

Cultivating and butchering i think gives the most to apoth but i think scavenging gives stuff 2

Cultivation, Scavenging, and butchering definitely yields Apoth components. Not sure about salvaging though....that is the one I am curious about. If it does...then that means all 4 gathering skills will give items for both Apoth and Talisman, which I would assume is the case...but should definitely double check just to be sure.

I would go with cultivation yes. I seem to get a ton of seeds, and its a good way to get rid of them and get materials for potions at the same time.

I'm starting to lean towards Butchering.

OK, Cultivating is complex and interesting, and has a cool UI. Big plus points there. But it's also kind of random. Is there any way to control what sorts of seeds you find? They just seem to pop up at random. It takes up tons of bag space and makes it hard to grow the ingredients you actually need once you get passed the stage where seeds are directly purchasable. OK, there's the AH - but who needs the mark ups? I've also yet to cultivate any sstabilising ingredients. That's a massive negative. I've heard it can be done, but it seems to come more as a rare bonus than from any kind of regular plan. You can get really cool extras, but you need nutrients, watering cans and soil, none of which you can predictably acquire as a cultivator...right?

On the other hand, butchering seems to produce a good array of ingredients, but most importantly, from reliable sources. Farm bears, you get Strength materials. Farm spiders, you get stabilising ingredients. You can go out and get the stuff you need rather than being a slave to chance, and it doesn't require any input besides farming the beasts. Downsides...it's grindier. It doesn't produce pigments as far as I know. On the other hand it produces stuff you can sell to cultivators so you're gaining cash rather than losing it.

Anything I'm overlooking here?

Scavenging turns out alot of good main ingredients and water later on, I'm doing fine with Scavenging/Apothecary. If you can overlook the fact you yourself can't get any good additional ingredients then I guess it's ok...

ah im in the same boat, im going Apoth- but i choose scavaging, i get TONS of seeds and water. .. i didnt know what butchery did i assumed make food. but im wrong lol eitherway i guess i will have to play around with it a bit.
